Easy light omelet recipe

Egg White Omelet

2 Egg Whites

1 Egg

¼ Cup Each

Asparagus

Red Pepper

Onion

Fresh Spinach

Salt and Pepper to taste

2oz Clarified Butter


  1. In a mixing bowl, whisk together all eggs until thoroughly mixed.

  2. In a sauté pan add 1oz of clarified butter and vegetables. Cook until desired tenderness is reached. Salt and pepper to taste.

  3. In a separate sauté pan, place remainder of clarified butter with egg mixture and allow eggs to cook until fluffy.

  4. Place vegetables on one half of the omelet.

  5. Fold egg over vegetables.
